Spring AI 2.1.0-M1 ships MessagePart model and OpenAI Responses API support

- Spring AI 2.1.0-M1 is out on Maven Central, the first 2.1 milestone, rebased on Spring Boot 4.2 (built against 4.2.0-M2).
- Message Parts: message content is now an ordered list of MessagePart entries (TextPart, ReasoningPart, ToolCallPart, ToolResultPart, MediaPart, UnknownPart), faithfully preserving model output order — supporting interleaved reasoning/tool calls and text-between-images. OpaquePayload replays Anthropic thinking signatures / Gemini thought signatures unchanged; UnknownPart keeps raw JSON of unmodeled blocks so nothing is silently dropped.
- Also new: support for OpenAI's Responses API, and a way to write pre-computed embeddings into vector stores.
