Document Understanding Library deepdoctection Updates to v1.0 with PyTorch Support

deepdoctection has released version 1.0 with a major refactoring. Key changes include PyTorch-only support for deep learning models, integration of more fine-tuned models from Hugging Face Hub (e.g., LayoutLM, LiLT), decomposition into sub-packages (dd-core, dd-datasets, deepdoctection), and new type validations and test suites. The library orchestrates document layout analysis, OCR, and token classification pipelines.
