Sparrow switches its Standard mode to Ministral 3 14B for local document extraction

Sparrow says its Standard tier now runs on Ministral 3 14B through vLLM for fully local document extraction.
- Tested in the Sparrow UI with a real extraction task and got a clean JSON array with correct field parsing.
- The demo reports about 21.8–22 seconds end to end.
- The pitch is that no data leaves your infrastructure, and the flow works without cloud dependencies.
