@remilouf mentioned he finally figured out why open-source structured outputs libraries slow down actual inference: the root cause is tail latency, which gets amplified especially during batching. He pointed out that the solution by dottxt-ai (@dottxtai, the maintainers of Outlines) achieves nearly constant runtime latency, remaining almost entirely unaffected.
