LangChain Core 1.7.1 Ships Two Fixes for Streams and Mermaid Diagrams

LangChain Core 1.7.1 is out with two developer-relevant fixes:
- Preserves gateway tracing metadata in v3 streams, keeping observability data intact during streaming
- Escapes node metadata in Mermaid labels to prevent rendering issues
The patch also bundles 32 dependency updates; no performance figures were provided.
