scikit-learn 1.9 adds callbacks: live progress bars and metric tracking during fitting

- scikit-learn 1.9 ships a callbacks mechanism: instead of seeing results only after fit() completes, you can now observe what happens inside the training loop.
- Two built-in callbacks require minimal setup:
- ProgressBar: a live view of fitting work;
- ScoringMonitor: keeps a history of metrics you can inspect afterwards.
- Especially useful for long fits like cross-validation.
