Sentence Transformers v6.0 adds ColBERT-style support

Sentence Transformers v6.0 has been released, introducing MultiVectorEncoder. This brings ColBERT-style late interaction models as a first-class model type for training, inference, and interpretation, alongside dense, sparse, and reranker models. Multimodal models like ColQwen will also move to the library soon.
