Sentence Transformers v6.0 Released with ColBERT Support

Sentence Transformers v6.0 has been released, introducing the MultiVectorEncoder. This update brings ColBERT-style late interaction models as a first-class citizen for training, inference, and interpretation, alongside the existing dense, sparse, and reranker model types.
