OpenMed 2.1.0 Released: Adds Clinical Routing and MCP Workflows

OpenMed 2.1.0 is out now. Key updates include clinical section and note routing, temporal/coreference graphs, span-grounded facts, OMOP loading, FHIR/OpenEHR export, and typed MCP workflows. Python, npm, and multi-arch containers are live.
